Join us on the Sapphire Coast for a one-of-a-kind oyster tasting. Where the table is pristinely set in the water, the wine is crisp, cold and local, & Australia’s finest oysters are the freshest you’ve ever tasted — harvested and served to you within minutes.

Your time in the water

Your tour will begin with a short boat cruise up the estuary, travelling through the leases where our oysters grow. Here, you’ll wade into the water, discover how we farm, and taste the freshest and finest rock oysters in the country — just moments after they’re pulled.

Within the estuary, the table is set with unopened oysters, shucking knives, fresh condiments, wines, and non-alcoholic drinks—ready for a truly immersive experience.

About the farm

The farm has been operating on Merimbula Lake for generations, quietly refining the craft since the 1920s. These waters are part of who we are. They shape the way we work, the way we eat, and the way we welcome guests.

This place has seen decades of early mornings, quiet rituals, and careful hands — each generation adding to the rhythm of the lake in their own way. Today, Merimbula oysters are served by some of Australia’s most respected restaurants, and are recognised as some of the finest Rock Oysters in the country. Now, we’re opening up the farm and inviting you in to taste what time, tide, and tradition have grown.
